Mint and chocolate have long been one of my favorite flavor pairings. In March, my local bakery always puts out a delicious mint chocolate chip muffin for St. Patrick’s Day and it’s been a tradition to grab one every year. Unfortunately, this year our bakery closed so I went on a mission to find a way to make my own at home.
My goal was to create a recipe that resembled these muffins but make them with common ingredients I already had in my pantry. There are a lot of recipes out there but this custom recipe is my favorite! You don’t have to make it green but the green is a nod to this St. Patrick’s Day tradition of mine. Plus it gives you a heads up that this isn’t your average chocolate chip muffin!

Ingredients in Mint Chocolate Chip Muffins
- All Purpose Flour: Flour is the foundation that helps shape these muffins and hold up all the chocolate chips
- Baking Soda: Helps the muffins rise and get that domed top
- Salt: Salt helps bring out the flavor
- Light Brown Sugar: This helps sweeten the muffin. I like to use light brown sugar at this ration to keep the muffins from getting too brown while baking and ruining the green color.
- Milk: Milk provides moisture to the muffin, keeping them soft and light
- Vegetable Oil: provides moisture to keep the muffins tender
- Eggs: Eggs help bind the batter together
- Mint Extract: Extract gives the muffins a refreshing mint taste. Be sure to measure carefully so the mint doesn’t become overpowering!

How to Make Mint Chocolate Chip Muffins
To make these delicious mint chocolate chip muffins, mix the flour, baking powder, and salt in a large bowl. Next, mix the brown sugar, oil, milk, eggs (slightly beaten), mint extract, and food dye into a medium bowl.
Pour the wet ingredients into the dry ingredients and fold together until smooth. Do not overmix or your muffins will be less light and airy than you want. I found about 35 folds through the bowl was ideal.
After the batter is mixed thoroughly, add the chocolate chips. Give these just a couple stirs to make sure they’re mixed throughout, then pour the batter into muffin liners. Try fun designs like these shamrock muffin liners if you’re making these muffins for St. Patrick’s Day!
Bake the muffins for 5 minutes at 425 degrees Fahrenheit, then drop the temperature to 350 degrees Fahrenheit for another 12 minutes. Baking at a higher temperature first will cause the muffins to get a better looking domed top. Test with a toothpick for doneness.


Mint Chocolate Chip Muffins
Ingredients
- 2 Cups All Purpose Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 2/3 Cup Light Brown Sugar
- 2/3 Cup Milk
- 2/3 Cup Vegetable Oil
- 2 Large Eggs
- 3/4 tsp Mint Extract
- 1 Cup Chocolate Chips
- 5 drops Green Food Dye
Instructions
- In a large bowl, mix flour, baking powder, and salt
- In a medium bowl, mix brown sugar, milk, oil, eggs, and mint extract
- Pour wet ingredients into dry and mix until smooth
- Add chocolate chips and mix evenly
- Pour batter into muffin liners in a muffin tin
- Bake at 425℉ for 5 minutes, then drop the temperature to 350℉ for about 12 more minutes or until a toothpick comes out clean.

Why You’ll Love These Muffins
Besides being a fun St. Patrick’s Day treat, these green muffins are great for any mint chocolate chip lover. The best part is that they’re super easy to make and ready in 30 minutes! They also use normal ingredients you have around the house so you hopefully don’t have to run to the store before making them!
You don’t have to make these muffins green, but I’ve found that the green color helps clue people into the fact that they’re not your average chocolate chip muffins! I’ve also found that Andes mints baking chips are a delicious substitution to chocolate chips!
