These chewy and delicious no-bake granola bars are an easy snack the whole family will have you asking to make on repeat!

After looking into what we were actually buying each month that contributed to our cumulative grocery expenses, I realized we were consistently spending $22-25/month on granola bars. There had to be a way to make them from scratch for less! There are so many granola recipes out there, but what I really wanted was a recipe similar to Sunbelt Bakery granola bars. I like the texture of those best because they don’t leave a mess, and they are easy to chew, even for young kids.

I came across this chewy granola bar recipe and was inspired to make it my own. After much trial and error, I created these chewy, no-bake granola bars. I hope you love this no-bake granola bar recipe as much as we do!

Difference Between Baked and No-Bake Granola Bars

Baked granola bars are either quite crumbly and dry or soft and moist. No-bake granola bars have a more chewy texture like that of a Sunbelt Bakery granola bar. The downside of a no-bake granola bar is that it needs to stay chilled to maintain its texture, whereas a baked granola bar can sit out on the counter without problem.

Ingredients In Peanut Butter Granola Bars

  • Rice Krispies– Provides structure and makes the bars crispy
  • Rolled Oats– Provides structure and makes the bars chewy
  • Honey– sweetens and helps the bars stick together
  • Brown Sugar-sweetens and bonds with honey to create a syrup
  • Coconut Oil – Helps the bars to set firm
  • Creamy Peanut Butter-Gives flavor and helps the bars stick together
  • Vanilla Extract– flavoring

How To Make No-Bake Peanut Butter Granola Bars (With Pictures)

Time needed: 2 hours and 10 minutes

Active time on this recipe is 10 minutes, but it requires 2 hours in the fridge to set

  1. Mix Dry Ingredients

    Mix Rice Krispies and oats into a large bowl.

  2. Make Sauce

    In a saucepot, bring honey and brown sugar to just boiling. Stir often to make sure nothing sticks to the bottom. Once it boils, take it off the heat and mix in the coconut oil, peanut butter, and vanilla extract until smooth. Be careful to avoid splashes of hot liquid when mixing in the solids.

  3. Mix Wet And Dry Ingredients

    Pour the sauce into the bowl of dry ingredients and mix well.

  4. Flatten Into Bars

    Pour the mixture into a 9 x 13″ pan over a sheet of greased wax paper. It’s best to use a pan with steeply angled sides. If they are too rounded, you may have funny-shaped curved bars on the edges. To flatten, lay another layer of wax paper on top and use the bottom of a glass to press down firmly on the bars.

  5. Set and Cut

    Let it set in the refrigerator for at least 2 hours before cutting. When it’s ready, cut into 18 even pieces. easy no-bake granola bar peanut butter chewy and crisp

No-Bake Peanut Butter Granola Bars

Ingredients
  

  • 2 Cups Rice Krispies
  • 2 ¾ Cups Rolled Oats I use old fashioned but you could also use quick oats
  • Cup Honey
  • ½ Cup Brown Sugar
  • Cup Coconut Oil
  • Cup Creamy Peanut Butter
  • 1 tsp Vanilla

Instructions
 

  • Mix Rice Krispies and Oats together in a large bowl.
  • In a saucepot bring honey and brown sugar to just boiling. Once it boils, remove from heat and mix in coconut oil, peanut butter, and vanilla until smooth.
  • Pour wet ingredients into the bowl of dry ingredients and mix well
  • pour mixture into a 9×13" dish over greased wax paper. To flatten lay another layer of wax paper on top and use the bottom of a glass to press down and make the bars smooth.
  • Refridgerate for at least 2 hours to set before cutting. Once set, cut into 18 even bars.

Notes

If you want to add chocolate chips use 1/2 cup mini chocolate chips. Sprinkle them over the bars after you’ve pressed them down. Gently press them in. Not too hard or else they will melt from the temperature of the bars.

Storage

No-bake granola bars are safe to eat at room temp but are best kept chilled in the refrigerator to keep them firm and prevent a sticky mess. They can last up to a month in the refrigerator or 6 months in the freezer. If freezing, wrap individually in wax paper to prevent sticking together.
