No-Bake Peanut Butter Granola Bars

These easy snacks are crispy yet chewy and packed with delicious peanut butter flavor!

Ingredients
  

  • 2 Cups Rice Krispies
  • 2 ¾ Cups Rolled Oats I use old fashioned but you could also use quick oats
  • Cup Honey
  • ½ Cup Brown Sugar
  • Cup Coconut Oil
  • Cup Creamy Peanut Butter
  • 1 tsp Vanilla

Instructions
 

  • Mix Rice Krispies and Oats together in a large bowl.
  • In a saucepot bring honey and brown sugar to just boiling. Once it boils, remove from heat and mix in coconut oil, peanut butter, and vanilla until smooth.
  • Pour wet ingredients into the bowl of dry ingredients and mix well
  • pour mixture into a 9x13" dish over greased wax paper. To flatten lay another layer of wax paper on top and use the bottom of a glass to press down and make the bars smooth.
  • Refridgerate for at least 2 hours to set before cutting. Once set, cut into 18 even bars.

Notes

If you want to add chocolate chips use 1/2 cup mini chocolate chips. Sprinkle them over the bars after you've pressed them down. Gently press them in. Not too hard or else they will melt from the temperature of the bars.
