One of my goals for this year is to bulk up my Capsule Pantry style freezer without spending a fortune. The goal is to have food always available for meals, even when money is tight. One way I do this is by buying in bulk when it is cheaper. To save money on chicken, I buy extra when it’s on sale, then cook it up in the crockpot or oven before freezing it. I can find sales on chicken pretty consistently at Aldi for $2.19/#. This saves me money in the long run and makes dinner faster for busy weeknights too!

How To Pre-Cook Chicken
Chicken needs to be cooked to an internal temperature of 165 degrees Fahrenheit to be safe for consumption. I like to cook mine in either the slow cooker or the oven. The crockpot works best if I’m going to be out of the house for the day, but the oven is the fastest. I usually just cook it at 350 degrees Fahrenheit and set my thermometer to beep when it gets to the correct temperature. Once it cools, I shred mine in the KitchenAid mixer for about a minute and a half.
Storing Pre-Cooked Shredded Chicken
I like to store my chicken in freezer-safe Ziplock bags. I portion out my shredded chicken into 1# packages, then squish all the air out before sealing. It’s important to make sure the chicken is fully cooled before packaging to avoid condensation and freezer burn. I usually use my chicken within a couple months, so I don’t have a problem with freezer burn in the Ziplock bags. If you wanted to preserve your chicken for longer, you could also vacuum seal your portions.
